Regenerative Grazing
Prioritising soil health and local biodiversity through managed livestock movement that mimics natural cycles, allowing pastures to rest and recover.
Closed-Loop Composting
Nothing leaves the estate that can be returned. Kitchen scraps and organic farm waste are transformed into nutrient-rich humus for our gardens.
Seasonal Growing
We plant with the rhythm of the valley. Our menus are dictated by the morning harvest, ensuring that only what is at its peak reaches the plate.

From Soil to Table

The ‘simple things done well’ is our guiding principle. By controlling the production of our ingredients—from heritage vegetables to pasture-raised proteins—we eliminate the distance between origin and enjoyment. This direct connection allows our chefs at Megalong and the Tearooms to highlight the nuances of the season, serving food that is honest, vibrant, and undeniably connected to this specific patch of earth.
